A classic combo and much loved bar, but without all the sugar. Or any sugar at all.

A day out at the beach or a spring day picnic calls for energy bars that doesn't taste like... energy bars. You know the one. With no added sugar, these bars are such a delight and I wouldn't dare slap the word "healthy" on them even though they are. You basically just need a food processor and you're good to go. These came out of the crave for something sweet with my coffee every morning and not wanting to make sticky walnut buns because I wouldn't be happy 3 weeks later. A win-win in my book and I hope you think so too.
Please read through the recipe before starting as the ingredients list are total weighed products. In the method you'll see how everything is divided.
Ingredients:
225g oats
350g Medjool dates
123g peanut butter
255g coconut cream
30g coconut oil
35g cocoa
1/2 tsp salt
50g 70% dark chocolate
50g milk chocolate
Method:
Soak your dates in hot water and put aside
Toast your oats in a pan on medium heat for about 3 minutes. Keep an eye on the oat and make sure it doesn't burn
Add the oats to a food processor and grind until coarse. Add 155g of dates, 115g coconut cream, 20g melted coconut oil and peanut butter to the coarse oats.
Blend until the ingredients come together and forms a ball
Transfer the peanut butter mixture to a loaf pan with parchment paper and press down firmly. Place in the fridge.
Clean the oats from the food processor and add 193g dates and blend until smooth. Once it has a caramel-like consistency, add 140g coconut cream, 35g cocoa, salt and 10g coconut oil. Blend until smooth and resembles a dark chocolate mousse. Pour over the peanut butter layer and smooth out the top. Place back in the fridge.
Melt the dark and milk chocolate and pour over as the last layer of the bars. Place in the fridge for an hour.
Use a sharp knife and cut into 2cm wide bars. Enjoy!
