I don't know why it's taken to me so long to make my own honeycomb and all it takes is 3 ingredients. This has now become one of those things where if I see it in a shop and want it, I go "but I can make that at home instead". Dip them in some chocolate, top off with flaky salt and you've got yourself a whole tray of homemade Crunchie using pantry staples. Amazing.
I've made some notes at the end of this post that you should read before making this recipe to make sure it comes out perfectly.
Ingredients:
- 250g sugar
- 170g honey
- 1 tbsp Bicarbonate of Soda (sifted)
Method:
Add sugar and honey to a medium size pot and let it melt on medium heat
The sugar + honey needs to get to an amber colour and reach a temperature of 150C
Once the sugar reaches 150C, remove your pot from the heat and add your bicarb. Stir immediately to make sugar the bicarb is evenly distributed. It will take a life of its own and grow quickly
Make sure not to over mix as you will kick out all the air bubbles
Add your fluffy mixture to an oven tray lined with grease proof paper/wax wrap
Wait for your mixture to cool completely before you break it to chunks
Coat in chocolate, use it as cake toppers, add it into your ice cream or eat them as is!
Notes
- Your sugar mixture must reach 150C or else it won't have that crunch once it has hardened
- Everything needs to be done quickly, so make sure you have your tray with greaseproof paper ready for pouring
- This is a HOT sugar recipe, so be aware of that when pouring your mixture
- Store your honeycomb candy in an airtight container to avoid it becoming chewy
