Layers of soft, warm brioche and chocolate plaited in an intricate design to make something so simple look as exquisite as it tastes. This recipe is quick enough to make in the morning and enjoy with some freshly brewed coffee.


And if morning baking prep isn't your thing, make the dough the night before and place in the fridge. Overnight rising in the fridge deepens the flavour. In the morning you can just add the filling and fold.



Ingredients:

For the brioche dough:

- 336g flour

- 25g sugar

- 1 tsp salt

- 1 packet yeast

- 3 eggs

-61g warm milk

- 113g softened butter


For the filling:

- 100g softened butter

- 50g hot chocolate/cocoa powder

- 50g brown sugar


Method:

  1. Add your eggs, milk and yeast to a bowl and mix

  2. Add your flour, sugar and salt to your mixer

  3. Pour in the wet mixture and use the hook attachment to knead

  4. While the dough in kneading, add pieces of your butter. Wait until one piece is fully incorporated before you add the next

  5. Cover your dough and let it rise for about 2 hours. The dough won't rise as significantly as pizza dough but that's okay. The dough will also look quite wet, that's also okay.

  6. While you wait, make your filling by adding all the ingredients and making a paste-like consistency

  7. Once your dough has risen, roll it out into a rectangle with a height of 2cm

  8. Add your filling across the entire area of the dough

  9. Without cutting, divide the dough into 3 parts. Fold the top part over to the middle, then the bottom part over to cover the 1st fold. You can watch a video here to see

  10. Roll the new rectangle to a height of 2cm and cut into strips

  11. Cut each strip into 3 leaving 1cm from the edge and plait. Roll up the plait with the edge at the bottom

  12. Place into a muffin tray and let it proof for another 30 mins

  13. Bake on 180C for 15 minutes

  14. Glaze with a simple icing sugar and milk mix (1:1)
